Nacido en Sevilla, comenzó su formación como pianista, pero pronto se apasionó por el canto, estudiando con Lambert Climent y Monsterrat Figueras en la Escuela Superior de Música de Cataluña, en Barcelona.

Ha interpretado Giustino (Vitaliano) de Vivaldi con George Petrou en el Festival de Ópera de Drottningholm, Idalma (Celindo) de Pasquini bajo la dirección de Alessandro De Marchi en el Festival de Innsbruck, y L’Incoronazione di Poppea de Monteverdi (Arnalta/Lucano) en el Teatro Colón de Buenos Aires bajo la batuta de Jean-Christophe Spinosi.
También ha interpretado la Pasión de San Mateo de Bach con Jordi Savall en el Auditori de Barcelona, la Chapelle Royale de Versailles y la Philharmonie de París.
En música posterior, Juan Sancho explora con maestría el repertorio belcantista, especialmente Rossini: ha encarnado así Albazar (Il Turco in Italia) en el Festival de Aix-en-Provence con Marc Minkowski (retransmitido por ARTE) y en la Ópera de Dijon junto a Antonello Allemandi ; Lindoro (L’Italiana in Algeri) bajo la dirección de Jean-Christophe Spinosi ; Almaviva (Il Barbiere di Siviglia) en el Staatstheater Darmstadt. Mencionemos también una Gala Rossini bajo la batuta de Sebastiano Rolli para el Megaron de Atenas.
Su extensa discografía incluye Artaserse de Leonardo Vinci (Erato CD y DVD), Virtù dei strali d’Amore de Cavalli con Fabio Biondi (Naxos), Trilogía de Monteverdi en el Teatro Real dirigida por William Christie y Les Arts Florissants (Dynamics y Virgin). Entre los compromisos para la temporada 2022-23, Juan Sancho interpretará el papel de Nearco en Aquiles en Sciro, de Francesco Corselli en la nueva producción de Mariame Clement dirigida por Ivor Bolton en el Teatro Real en Madrid.
También interpretará el papel principal en Orphée et Eurydice de Gluck con Jan Tomasz Adamus y la Capella Cracoviensis en el Theater Biel Solothurn.
Terminará su temporada en Potsdam en junio bajo la dirección de Alessandro de Marchi para la premiere de Idalma de Pasquini (Celindo), dirigida por Alessandra Premoli.
